Corn Casserole

16 oz cream corn

1 box Jiffy corn muffin mix

1 egg

1 can green chilis

2 tbs vegetable oil

1/2 cup milk

6-8 oz monterrey jack cheese (sometimes I will use pepper jack cheese for a nice kick!)

Spray pyrex dish (I use a tall, round one) with Pam. Mix corn. muffin mix, and egg together. Add green chilis, oil, milk, and cheese- save some cheese for the top! Bake at 400 degrees for 30-45 minutes.
